The all-time and easiest manner to make a block ahead of time is to freeze the unassembled/undecorated layers. Over the past few years, I've tested multiple different ways to freeze cakes including changing factors like the cooling process, the wrapping, the container, the length of fourth dimension, thawing, decorating, etc. Terminal year I found the best method when I was prepping and practicing cakes for my daughter's altogether. How to Freeze Cakes

Pace one: Broil and completely cool a cake/cake layers. These pace-past-step photos show circular cakes, merely you lot can freeze square, rectangle, Bundt cakes, etc. See my 10 best Block Baking Tips for best practices on blistering and cooling cakes.

Pace 2: Once the cake(s) cools completely, wrap it in Press & Seal. From 1 baker to some other– this is the best product for wrapping cakes. Maybe information technology'southward just me, but thin plastic/saran wrap is incredibly clingy and frustrating. And I always experience like I need to double wrap food when using it. It definitely works, only Press & Seal is and then much easier to use and I've honestly establish that information technology keeps my food fresher. (Non working with this make, merely really dear it.)

Pace iii: Write the type of block and use-past date on a big piece of aluminum foil. For best taste and texture, don't freeze cakes for longer than 3 months. You lot could stretch information technology to 4 or 5 months, but the sooner y'all serve information technology, the fresher information technology tastes. I write on the aluminum foil before wrapping the block simply in case the ink seeps through. (It has before!)

Step 4: Wrap the cake in the aluminum foil.

Step half-dozen: Freeze for up to 3 months.

The cakes are wrapped in 2 layers: Printing & Seal, then aluminum foil. The commencement layer keeps the cake tight and fresh and the aluminum foil ensures no condensation volition seep in. This is also how I wrap banana staff of life and other quick breads, too. Double layer = maximum freshness and no freezer burn. Moisture is the enemy, then don't exist afraid to add another layer of Press & Seal or aluminum foil.

How to Thaw Cakes

Thawing cakes is piece of cake. Transfer the wrapped cakes from the freezer to the refrigerator one day earlier decorating/serving. I usually have them out of the freezer container to thaw. The cakes take at to the lowest degree 8 hours to thaw completely in the fridge. Sometimes I forget and just allow the cake(s) thaw at room temperature, but it's better they thaw at a slower rate in the refrigerator.

This is important: Make certain you're thawing the cakes while they're still in the wrapping. Y'all encounter, condensation forms equally foods thaw. This way the condensation will grade on the wrapping, not the cake. Wet sticky block, anyone?

Best Cakes to Freeze

You can freeze just about any cake after they've cooled completely. Mega flavorful cakes such equally banana cake, chocolate cake, carrot cake, and pumpkin block freeze and thaw beautifully when wrapped in a couple layers, as detailed above. I find their flavour is fifty-fifty ameliorate after the freezing/thawing procedure! Bundt cakes and pound cake freeze wonderfully as well, just make sure they're completely cooled and wrapped tightly earlier freezing. For cheesecake instructions, run across "How to Freeze Cheesecake" in my cheesecake recipe.

Bakery'due south Tip: For absolute best taste and texture, avoid freezing delicate cakes similar angel food cake, vertical cake, and pavlova. Though you definitely COULD freeze these (and the recipes instruct how), they gustation best when freshly made.

All of our cake recipes include make-alee and/or freezing instructions.

#1 Success Tip

Don't Freeze Decorated Cake: For the accented all-time gustation and texture, gather and decorate the block as close to serving as possible. That's why I recommend only freezing the cake/cake layers. A completely busy cake will contract and expand during the freezing/thawing procedure, ruining some of your difficult work. Y'all tin can make the frosting ahead of time and refrigerate it for 1 mean solar day, merely fresh frosting really does gustation best. Freezing leftover frosted cake is completely fine, though. (Because information technology's merely leftover and doesn't demand to impress anyone anymore!)
